INGREDIENTS
1-1/2 cups cooked country ham, ground
4 ounces cream cheese, softened
1/4 cup chopped yellow sweet onion
1/4 cup chopped pecans, toasted
2 tablespoons chopped fresh parsley
1 scant tablespoon spicy brown mustard
Toasted pecan halves for garnish
DIRECTIONS:
In a medium bowl, mix together ham, cream cheese and onions. Use a hand
mixer on low speed to blend. Add chopped pecans, parsley and mustard.
Cover and refrigerate at least 2 hours or overnight to allow flavors to
meld. When ready to serve, bring to room temperature for 30 minutes. Transfer to
serving bowl and garnish with pecan halves. Serve with whole wheat
crackers, crostini or low salt pita chips.
NOTE: A great way to use leftover country ham. Can be served warm or room temperature!
Yield: 2 cups
