ERIC MARTINO / CARRABBA'S ITALIAN GRILL
1 oz garlic, sliced
1 oz extra virgin oil
3/4 c of primavera vegetables (directions below)
1/4 c sliced mushrooms
1/8 c peas
Pinch of black pepper
3 oz chicken stock
10 oz whole wheat pasta, cooked and drained
1 t butter
1 t chopped fresh parsley
Saute garlic in oil on medium heat until garlic turns golden brown. Deglaze pan with chicken stock. Add pasta and butter, and toss to coat pasta.
Add vegetable mixture, pepper to taste and parsley, saute until ingredients are hot, and serve.
TO PREPARE THE VEGETABLE MIX:
Use your choice of vegetables (broccoli, cauliflower, carrots, zucchini, yellow squash, eggplant and red bell peppers), all sliced ΒΌ' X 3' long and boiled for 3 minutes.
