1 16 oz jar of Loveless blackberry preserves
1 cup low sodium soy sauce
1/2 cup balsamic vinegar
1 small can chipotle peppers liquid only (add peppers for extra heat)
1 T minced fresh garlic
1/2 cup finely minced onion
4 T canola oil
In Saucepan over medium-high heat ad the oil onions and garlic and sauté until golden. add the remaining ingredients and stir well reduce heat and simmer for 20-30 minutes
NOTE: Chipotle peppers are packed in a light tomato broth. This broth often has enough heat to flavor the glaze but feel free to ad some chopped chipotle peppers for more spice
This glaze is perfect for a marinade or sauce/glaze when roasting or grilling pork, chicken or fish. ENJOY!
