RECIPE # 4338 - ANCIENT LAMB SHAWERMAH - Friday, July 10, 2009

CHEF RAKKA - CAFE' RAKKA

10 oz filet of lamb (or prime steak) thinly sliced
1/2 red onion slice
1 lg large piece of pita bread, cut in half
1 c Italian parsley, chopped
1 c cilantro, chopped
1 tomato, diced
Pickles of your choice  

Marinade ingredients: 
3 cloves garlic, minced
1/2 t black pepper
1 T lemon juice
2 oz extra virgin olive oil
zest of 1 lemon
1/4 c parsley, chopped
1/2 t coriander
1/4 t ground cumin 

Mix marinating ingredients in a mixing bowl and marinate the meat. Let it set for approximately one hour in the refrigerator.  

Heat a Salt Block on stove top or grill.  (If using a flat top stove,  DO NOT Place directly on stove top.)  If using a gas stove you may place it directly on top of low flame. When block has heated to the point that food will sizzle when added, place meat on block and cook approximately one minute.  Flip meat after one minute and continue cooking for an additional minute. 

Remove meat from salt block; turn off stove, and let the salt block cool naturally.

Place meat on a cutting board.  Slice meat into thin slices.  Add sliced onion, chopped parsley, chopped cilantro, diced tomatoes, (may add optional hot pepper of your choice)  Mix and allow flavors to blend.  Place in pita bread halves and enjoy with a salad.
