1 15 oz. can garbanzo beans
1 stalk celery, finely chopped
1 green onion, finely chopped
1 T mayonnaise, or to taste
1 T sweet pickle relish
1/4 t salt
Mash the garbanzo beans with a fork or coarsely chop in a food processor, leaving some chunks. Add the celery, onion, mayo and relish. Add salt to taste. Adjust mayonnaise and relish to taste. Serve in a lettuce wrap or as a sandwich spread. You could also serve this on a cucumber round, or favorite cracker, as a delicious cocktail party treat.
