RECIPE # 4370 - SMOKED BRISKET, Wednesday, September 16, 2009




1 bison brisket

2 onions, sliced

Granulated garlic

Kosher salt

Black pepper

Chili powder

Brown sugar

Mix all dry ingredients together.  Rub brisket generously with seasoning.  Smoke for 45 minutes. Wrap brisket and onions in plastic wrap then foil.  Place in roasting pan and place in over for 8 hour at 250 degrees.  Once tender unwrap and chop with knife.


Potato Cake

2 Idaho potatoes

1/2 yellow onion, peeled

2 T parsley, chopped

2  eggs

6 T flour

Salt and pepper to taste

Vegetable oil

Peel potatoes and place in bowl of cold water as you finish peeling the others.  Place onion in food processor with shredding blade.  Then shred potatoes.  Place in large mixing bowl add parsley, eggs, flour, salt and pepper.  Mix well.  In hot saut√© pan with oil spoon in potato mixture.  Cook on one side until brown then turn on other side until done. 

Watermelon BBQ Sauce

12 cups diced watermelon

2 oz. Tabasco

1 cup watermelon liqueur

4 cups ketchup

1 cup tomato paste

1/4 cup rice wine vinegar

2 cups brown sugar

Peel, seed and dice watermelon.  Mix all ingredients into a pot and bring to simmer.  Cook for 10 minutes and puree with burre mixer.
