DEVILED COUNTRY HAM SALAD
4ea 8oz Packages of Loveless Cafe Country Ham Biscuit Pieces
5 c water
1.5 c Dukes mayonnaise
.5 c Creole mustard
.25 Prepared yellow mustard
1 bunch scallions, chopped
.5 bunch fresh parsley, chopped
.5 c Loveless Cafe Chow Chow Relish
1 tsp ground black pepper
1 tablespoon hot sauce (optional)
1 tablespoon ground horseradish (optional) Pinch nutmeg (don't use too much!)
In a medium saucepan, add 5 cups of water and bring to a boil. Once water is boiling, add pieces of country ham a few at a time, cooking quickly for about 2 minutes. Remove and let cool.
In a food processor, chop ham into fine pieces, set aside. Add remaining ingredients to food processor, blend well and add to country ham. Mix well, refrigerate until needed.
Deviled Country ham is great as a spread on sandwiches, crackers and, of course, biscuits.
NOTE: Don't throw away the water used to cook the ham - use it to cook up a great bean soup or a pot of rice, potatoes or veggies!
