Serves 4
1 cup low-sodium salsa
1 cup cooked no-salt-added black beans or red kidney beans
1 cup fresh or frozen sweet corn
2 tablespoons chopped cilantro
2 boneless, skinless chicken breasts
DIRECTIONS:
Mix salsa, beans, corn and cilantro together. Spoon half of the salsa mixture over the chicken and marinate for at least an hour. Preheat oven to 350 degrees. Bake chicken for 30 minutes or until cooked through. Slice the chicken breasts and top with remaining salsa mixture.
