Chicken Noodle Casserole
4 Boneless Skinless Chicken Breasts Halved
4 C Egg Noodles
4 C Water
Big Pinch Salt & Pepper
1 T Vegetable Oil
8 oz Cream Cheese
1 C Sour Cream
1 C Shredded Cheddar
2 C Sliced Button Mushrooms
1 C Crushed Crackers or Potato Chips
1/4 C Melted Butter
Simmer chicken breasts approx 4 minutes in 4 C of water, then add the noodles for another 8 minutes in the same pot. Noodle should just be aldente. Add salt and pepper. Pull chicken from water and dice into large chunks. Add 8 oz Cream Cheese to hot stock water, stir until melted.
Add one C sour cream, 2 C sliced button mushrooms, and 1 C shredded cheese. Mix well.
Pour contents into buttered baking dish. Topping: combine melted butter and crackers (or potato chips) and cracked pepper and place on top of casserole. Bake for 20 minutes at 350.
