Miss Mary Bobo's Chess Squares
- 1 c butter
- 2 c brown sugar
- 1/2 c sugar
- 4 eggs
- 1 t vanilla
- 2 c all-purpose flour
- 1 t baking powder
- 1/2 t salt
- 1 c chopped pecans
- Jack's Whiskey Buttermilk Butterscotch Sauce (recipe follows)
Heat oven to 350 degrees. Grease a 9 X 13 inch baking pan. Cream butter and sugars in a large mixing bowl until fluffy. Add eggs and vanilla, beating until smooth. Blend in the flour, baking powder, and salt. Stir in the pecans. Pour into the greased pan. Bake for 25 to 30 minutes or until just set. Cool; cut into squares and serve with a spoonful of Whiskey Buttermilk Butterscotch Sauce (without pecans.)
Makes 16 servings, or cut into 24 smaller bar cookie portions.
Jack's Whiskey Buttermilk Butterscotch Sauce
- 1 c sugar
- 1/2 c buttermilk
- 1/2 c butter
- 2 T corn syrup
- 2 T whiskey
- 1 c toasted chopped pecans, optional
Combine sugar, buttermilk and butter in a small saucepan. Cook, stirring constantly and simmer until the sugar has melted and the mixture is smooth. Stir in whiskey and nuts. Serve warm or at room temperature. Cover and keep refrigerated.
Makes about 3 cups with nuts.
