
GOURMET GADGET GAL JANE GAITHER / Tennini Panini
You'll need:
1 loaf dense bread for grilling like bakery Italian
1 ripe local Tomato (or any ripe local tomato)
Thick Bacon – I use Benton's from Vonore, Tennessee
Pimiento Cheese Spread
softened butter for spreading
Lodge 12" Grill Pan and Panini Press
Gourmet Gadget Gal's Pimiento Cheese Spread:
3 cups Shredded Cheddar Cheese
1 (4 ounce) jar diced pimientos, drained
½ teaspoon prepared minced garlic
1 teaspoon prepared horseradish
1 teaspoon Durkee's
½ teaspoon hot sauce
1 teapoon Worcestershire sauce
a few grinds of fresh black pepper
6 Tablespoons Mayonnaise (I use Dukes)
Mix all ingredients together. Spread each slice of bread with butter. Heat grill and Panini Press on Medium heat. When heated, place bread butter side down on grill and top with a few spoonfuls of Pimiento Cheese. Add crispy bacon and sliced tomatoes. Top with bread – butter side facing up. Take hot Panini press and place on top of bread for 2 minutes. Remove press and remove sandwich to plate. Enjoy!
