1 9-inch pie shell
1/2 Vidalia onion, chopped
4 ripe tomatoes, sliced
1/4 c. sliced basil
1 c. grated Cheddar cheese
1c. grated Gruyere or Mozzarella cheese
3/4 c. mayonnaise
salt and freshly ground black pepper, to taste
*optional: add 1/4 cup cooked & crumbled bacon or pancetta
Preheat oven to 350 degrees. Brush pie shell with evaporated milk and bake until lightly browned (8-10 minutes).
Place sliced tomatoes in colander and sprinkle with salt. Allow to drain 15 minutes, then press excess water out of tomatoes with paper towels.
In bottom of baked pie shell, sprinkle onions, tomatoes, and basil.
In a medium bowl, mix the cheeses, mayo, salt and pepper. Mixture will be "gooey". Spread mixture over the tomatoes.
Place in oven and bake 30 minutes or until browned and bubbly.
