Fresh Apple Cake
3/4 cup oil
2 cups sugar
2-1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
3 cups apples, peeled & chopped
1 cup pecans, chopped
6 oz. butterscotch chips
*Caramel sauce of your choice
Preheat oven to 350 degrees.
Whisk together flour, soda, baking powder, salt and cinnamon.
Combine oil, eggs and sugar in mixing bowl; beat at medium speed until well mixed.
Add dry ingredients alternately with apples to egg mixture beginning and ending with flour. Mix well.
Stir in pecans and half of butterscotch chips. Spread batter into a greased 13 x 9 baking pan. Use remaining chips to sprinkle over top & bake 55-60 minutes or until done.
*NOTE: The caramel sauce shown on "Talk of the Town" is Katherine's "secret" recipe. It can be purchased at The Two Kates, or a store-bought sauce such as Smuckers will work as well.
