1 pound of Crab Meat
1 1/2 T Dijon Mustard
1/2 Red Onion, finely diced
1 Red Red Bell Pepper, finely diced
1 Green Bell Pepper, finely diced
1/2 c Panko Bread Crumbs
2 T Old Bay seasoning
Salt and Pepper to taste
Butter for frying
Finely dice the bell peppers and onions and put in a mixing bowl. Add crab meat, eggs, bread crumbs, mustard and Old Bay seasoning. GENTLY mix by hand to incorporate all ingredients, if you are too rough, the crab meat will likely fall apart. Portion crab cakes in any size, similar to hamburger patties.
Melt butter in a non-stick skillet on medium high heat and sear the cakes until you have a golden brown crust on both sides. Finish in a 350 degree oven or toaster oven for about 10 minutes if they are thick or browning too fast in the skillet. Serve immediately.
Fried Green Tomatoes
2 Green Tomatoes
1 quart Buttermilk
2 c Flour
1 T each salt and pepper
2 c Panko Bread Crumbs
Hot Sauce of your choice, to taste
Vegetable oil for frying
Slice green tomatoes into about 1/4 inch slices. Mix buttermilk and a few shakes of hot sauce in a large container and soak the tomato slices overnight.
Heat vegetable oil in a deep fryer to 350 degrees. Meanwhile, mix flour, salt and pepper together in a bowl, and place bread crumbs in another bowl. One at a time, place a tomato slice in the seasoned flour and dredge on both sides. Dip it back in the buttermilk and then dredge it on both sides in the bread crumbs. (Repeat dredging in flour twice for a thicker coating)
Place tomatoes in deep fryer and cook until they are golden brown. Remove from the fryer and drain on paper towels. If desired, season with salt and pepper to taste.
