2 c chicken breast, cooked and cut into pieces
1 (8-oz) can water chestnuts, drained and chopped
1 c chopped celery
1 c chopped onion
1 1/4 c chopped green pepper, reserve ¼ cup
1 (8-oz) can mushroom pieces, drained
1 1/4 c reduced fat mayonnaise
1/3 c lite soy sauce
3 T lemon juice
1 (4-oz) jar diced pimento, drained
2 (3-oz) cans rice noodles
Combine all ingredients except 1/4 cup chopped green pepper, pimento and rice noodles in a large bowl; stir to mix completely. Spread in a 9 X 13-inch baking dish coated with vegetable spray. Sprinkle pimento and green pepper on top and bake casserole at 350F for 35-40 minutes or until slightly bubbly. Serve over rice or chow mein noodles. Yield: 6 servings.
