CHICKEN AND BISCUIT PIE
2 cups chopped cooked chicken
1 small onion, diced
½ cup chopped celery
½ cup chopped carrot
½ cup frozen peas
2 T butter
1 can cream of chicken soup
2 cups Loveless biscuit mix
1 & 1/4 cup buttermilk
½ cup shredded cheddar cheese
Salt and pepper to taste
Sautee onions, celery and carrots in butter until tender. Mix chicken, vegetables and soup mix together. Mix biscuit mix, cheese and milk together. In a well-greased baking dish, spread half of the biscuit mixture in the bottom of the pan. Add chicken and vegetable mixture and top with remaining biscuit mixture. Bake in a 350 degree oven for approximately 25-30 minutes until golden brown.
