PUMPKIN PARFAITS
1 cup mashed pumpkin
1 package (4 serving size) sugar free, non fat vanilla instant pudding
1 teaspoon pumpkin pie spice
1 cup evaporated skim milk
1 cup skim milk
½ teaspoon vanilla
Mix all ingredients together in a mixer bowl. Place in parfait glasses and chill until set.
Yield: 6 (1/2-cup) servings.
