RECIPE # 4600 - RED VELVET CAKE - Wednesday, February 9, 2011

DAISY KING / MISS DAISY'S KITCHEN

1/2 c butter, softened
1/2 c vegetable shortening
2 c sugar
4 eggs
2 1/2 c all purpose flour
1 t baking soda
1/2 t salt
4 T cocoa
1 c buttermilk
1 t vanilla extract
3 T red food coloring
 
Assemble all ingredients and utensils. In large bowl of mixer, cream butter, shortening and sugar. Add eggs, one at a time. In another bowl, combine flour, soda, salt and cocoa, then add gradually to the butter mixture, alternating with buttermilk. Add vanilla extract and food coloring. Blend well. Distribute batter evenly among three 9-inch greased and floured cake pans. Bake in a 350 degree oven for 25-30 minutes. Cool and frost. Yield: 15-18 servings
 
CREAM CHEESE FROSTING
 
1 8-oz package cream cheese, softened
1/2 c butter, softened
1 1 lb box confectioners sugar
1 T vanilla extract
 
In large bowl of mixer, mix cream cheese and butter. Add sugar gradually, then add vanilla. Beat until light and fluffy. yield: 3 1/2 cups.
