DAISY KING / MISS DAISY'S KITCHEN
1 15-ounce can black beans, drained
1 16-ounce can niblet corn, drained
2 tomatoes, peeled, seeded and diced, or 2 c cherry tomatoes, cut in half
1 small green pepper,diced
1 small red pepper, diced
4 green onions, diced
3 T minced cilantro
2 T red wine vinegar
1/2 t ground cumin
1/8 t red pepper flakes
Dash lemon or lime juice
3 T olive oil or to taste
Salt and pepper to taste
Mix black beans, corn, tomatoes, bell peppers, onion and cilantro. In a separate bowl, mix remaining ingredients and pour over bean and corn mixture. Chill 4 hours or overnight. Yield: 6 servings
