LYNNE TOLLEY / MISS MARY BOBO'S BOARDING HOUSE

2 eggs, beaten

2/3 cup sugar

2/3 cup butter, melted

2/3 cup light corn syrup

2/3 cup coconut

½ tsp salt

1 tsp vanilla

1 Tbls brown sugar

1 cup oatmeal---secret ingredient!

1 pastry pie shell, partially baked (not brown)

Mix all ingredients together and pour into pie shell.  Bake at 325 degrees for approx 45 minutes. Top with Jack's Whipping Cream, recipe follows below:

½ pint heavy whipping cream

2 Tbls  powdered sugar

1 Tbls  Jack Daniel Whiskey

Beat cream in mixer until soft peaks form. Stir in sugar and whiskey.  Good on all desserts calling for whipped cream topping.
