RECIPE # 4685 - TENNESSEE CHESS PIE - Friday, August 12, 2011

1/2 c butter, softened
2 c sugar
1/2 c thawed frozen orange juice concentrate
1/3 c water
1 T plain flour
1 T cornmeal
1/2 c shredded coconut
2 nine inch pastry pie shells
Preheat oven to 350. Cream butter in mixer. Gradually add sugar and beat well. Beat in eggs, one at a time. Combine orange juice concentrate with water and blend into butter mixture. Beat in flour and cornmeal. Fold in coconut. Divide mixture evenly between pie shells. Bake at 350 until golden or until set in center , approximately 45-50 minutes.
