RECIPE # 4694 - PENNE ALA VODKA - Wednesday, August 31, 2011

Serving Size – 3 portions 


3 T olive oil, blended

1 T fresh garlic, chopped

1 c Roma tomatoes, diced

1/2 t crushed red pepper

1 c Marinara sauce, prepared

1/8 t Kosher salt

Pinch white pepper

3/4 c heavy cream

3 T vodka

16 oz Penne pasta, cooked

1/2 c Parmesan cheese

1 T chopped parsley

Cook Penne pasta according to package directions.

In a heavy bottom sauté pan, heart oil over medium heat. Add garlic to the pan. Sauté until the garlic starts to turn golden brown (caramelize). Add diced tomatoes, crushed red pepper, kosher salt, white pepper, prepared marinara, heavy cream and vodka. Mix together over medium high heat and simmer for 2 minutes, stirring occasionally. Add cooked penne pasta and half of the parmesan cheese. Stir to mix. Simmer for 2 minutes over medium high heat, until pasta is hot. Mound into serving bowl. Garnish with rest of the parmesan cheese and chopped parsley.

Note: If you want to add some protein to the dish, try adding cooked chicken, cooked sliced Italian sausage or cooked salad shrimp.
