"GOATS in COATS"
1 pound ground Chorizo (found in the sausage section of the grocery store)
2 cups baking mix
1 cup shredded cheddar cheese
1 (4-oz) container goat cheese
Preheat oven to 350 degrees. Mix Chorizo, baking mix, and cheddar cheese until well-blended. Take approximately 1 tsp of goat cheese and wrap it with the Chorizo mixture, making each ball about 1 inch in diameter. Place on cookie sheet and bake for 15 minutes.
SLOW COOKER APPLE BUTTER
5 pounds apples, peeled, cored, and roughly chopped
½ cup water
2 cups sugar
1/8 cup apple cider vinegar
1 tsp cinnamon
1 tsp nutmeg
Place apples in large pot with water. Bring to boil, stirring frequently to prevent burning. Boil over medium heat for 20 minutes. Drain excess water from the apples and mash with a potato masher to desired consistency (can also use an immersion blender for smoother texture.) Add apples, sugar, vinegar, cinnamon and nutmeg into your slow cooker. Cook, uncovered, for 8 hours. Leftovers may be stored in the refrigerator or frozen for later use.
