RECIPE #4739 - PUMPKIN SPICED OATMEAL, Friday, December 2, 2011

1 serving of oatmeal, prepared according to package directions

1 tbsp. pumpkin butter

1/2 apple, diced


1 tbsp. brown sugar

pinch of salt

1/4 cup water

1/4 cup raisins or dried cranberries

1 tbsp. pecans or walnuts, toasted

While preparing oatmeal according to package directions, combine water, cinnamon, sugar, salt, and raisins or dried cranberries in a small saucepan. Bring to a boil and cook stirring until sugar dissolves (usually takes less than 1 minute). Add diced apple and reduce heat to medium. Cook, stirring frequently until apples are tender, and liquid reduces, about 8-10 minutes. Once oatmeal is prepared, stir in pumpkin butter. Then top with apple mixture and nuts. Enjoy! Makes one serving.
