RECIPE # 4742 - HONEY CHEESE SPREADS - Friday, December 9, 2011

Honey Blue Cheese Spread

1/3 cup yellow raisins

2 tablespoons Jack Daniel's Tennessee Honey Liqueur

8 ounces cream cheese, softened

4 ounces crumbled blue cheese

1/3 cup chopped toasted walnuts (black walnuts are great, too)

¼ cup green onion slices

Black pepper, to taste

Combine the raisins and the Tennessee Honey in a small bowl and let sit about 30 minutes.  Add the cream cheese and the blue cheese and blend well.  Stir in the walnuts and green onions.  Makes about 2 cups.

 Honey Jezebel Cheddar Spread

 Jezebel sauce is that old Southern concoction of jam, horseradish, and black pepper.  In the old days it was the hot pepper jelly alternative for slathering over a block of cream cheese to serve with crackers.  Here's our updated version with a little more punch thanks to sharp cheddar cheese and a little sweetness from Jack Daniel's Tennessee Honey.

8 ounces cream cheese, softened

2 cups (8 ounces) sharp cheddar cheese

1/4 cup pineapple or apricot preserves

¼ cup prepared horseradish

1 tablespoon Jack Daniel's Tennessee Honey Liqueur

1 teaspoon dry mustard

1 teaspoon coarsely ground black pepper

Crackers

Combine all the ingredients in a medium bowl.  Pack in a crock or bowl.  Serve with crackers.  Makes about 2 ½ cups.
