CHEF CHASE INGALS / CABANA
Chocolate Peppermint Pot de Crème
4 c Heavy Cream
2 c Sugar
12 Egg Yolks
1 ¾ c Chocolate Chip
1 Tablespoon Vanilla Extract
2 Tablespoons Peppermint Schnapps or any other flavored liquor
Boil Cream and Sugar in stainless steel pot
In mixing boil whisk egg yolks
Add 2 cups boiling cream to bowl with eggs and whisk well
Add egg mixture back in cream and return to a boil and whisk until think (30-40 sec)
Add Vanilla and Schnapps
Pour hot cream over chocolate in a mixing bowl and whisk well
Pour mix into desired dish and chill over night
NOTE: For other flavors, you can use Grand Marnier, Chambord, and Amaretto, etc. It can also be presented in a different dish; brulee dish, coffee cup, shot glass, champagne glass, etc.
