Whole grain
pancake mix
1 sweet potato
diced
4 oz dried cranberries
6 oz water
Peel and dice sweet potato into bite size pieces. Saute
in water until soft (approximately 10 minutes).
Mash potato and then add to whole wheat batter.
Add butter to skillet. Turn heat to
medium.
Pour 1/2 ladle of mix into pan.
When pancake forms bubbles around edges, flip to bake other side. Garnish with cranberries.

Melt butter, add to reduced calorie syrup, add
cranberries
