WHISKEY HABANERO SAUCE

  1. While wearing gloves, de-stem 3 ounces of Habanero Peppers and chop them until fine, preferably in a food processor.
  2. Measure 2 oz of your favorite Whiskey and 4 oz of White Vinegar into a medium size sauté pan.  Add the fine chopped Habanero Peppers.
  3. Bring the mixture to a boil over medium heat for 1 minute, to infuse the Habanero flavor into the liquid, and cook off the alcohol.
  4. Whisk in 0.5 oz Cornstarch vigorously until smooth.
  5. Combine this thickened mixture with 1 Cup Ketchup, 1 Cup Molasses, and 1 Tbsp Kosher Salt and whisk vigorously until thoroughly combined.
