RECIPE # 4812 - BLUEBERRY COBBLER - Monday, April 23, 2012

ANDY MARSHALL / PUCKETT'S GROCERY/BLUEBERRY COBBLER

2 c sugar

2 c self-rising flour

2 c buttermilk

1 stick butter

1 T cinnamon

1 T  vanilla

6 c fresh blueberries

1/2 c orange juice

1/3 c brown sugar

Spread blueberries in the bottom of a 9"x 13" pan. Pour orange juice over blueberries. Sprinkle brown sugar across the blueberries.

In a mixing bowl, combine sugar, self rising flour, buttermilk and melted butter. Whisk ingredients until mixed well. Add vanilla and ground cinnamon, stir again. Pour the batter mixture over the pan with the blueberries, covering all the fruit.

Place in a preheated oven at 300 degrees and bake for 60 minutes. Check the cobbler with a toothpick or knife. If batter is not fully cooked, return to oven and continue cooking. Check cobbler at 10 minute intervals.
