1 lb ground pork, turkey or chicken
2 t sesame oil
1 1/2 T minced garlic
2 T fresh ginger, minced or grated
1 1/2 oz honey
2 T soy sauce
3/4 c chopped water chestnuts
1/2 c chopped cilantro, extra for garnish
1/4 c sliced green onion, extra for garnish
2 t lime zest
! head Bibb or Boston lettuce
Heat oil over medium heat in a large saucepan. Add ground meat, garlic and ginger and stir until meat is cooked. Add remaining ingredients except lettuce and cook for a few minutes until flavors combine.
Separate lettuce leaves on a platter, place a spoonful of meat mixture in each leaf, top with additional green onion and cilantro for garnish, and add hot sauce if desired before serving.
