DAISY KING / MISS DAISY'S KITCHEN
2 14-oz cans quartered artichokes
1 c grape or cherry tomatoes, quartered
1/4 red onion, sliced in very thin rings
1 T fresh parsley, chopped very fine
Combine all ingredients in a large bowl and stir in dressing (recipe below). Chill for several hours before serving.
Balsamic/Dijon Dressing:
1/4 c Balsamic Vinaigrette Dressing
1/4 c olive oil
2 T Dijon mustard
1/2 t salt
1/4 t black pepper
Combine all ingredients and whisk until well blended.
Yield: 6-8 servings
