2 c plain flour
1/4 c sugar
2 t baking powder
1/2 t baking soda
1/2 t salt
1 (7 oz) box or can almond paste
1/2 c orange juice
1/2 c orange marmalade
4 T (1/2 stick) butter, melted
1 large egg
1 t almond extract
Preheat oven to 375 degrees and grease muffin pan (or use cupcake liners).
Sift flour, sugar, baking powder, baking soda and salt into large bowl.
Grate the almond paste into the flour and stir until flour mixture covers all pieces of paste.
Separate any pieces that have stuck together.
Beat orange juice, marmalade, butter, and egg until well combined.
Add liquid ingredients to dry ingredients and stir until just combined. Do not over mix.
Spoon batter into 12 muffin cups dividing evenly.
Bake for approximately 15-18 minutes or until lightly golden on top.
Makes 12 muffins.
