2 medium sized fresh tomatoes, or 4 to 5 Roma tomatoes
12 slices white bread
1/2 to3/4 cup mayonnaise
2 teaspoons are to taste grated onion
3/4 teaspoon salt
1/8 teaspoon white pepper
Fresh chopped parsley and basil for garnish, about 3 tablespoons
Bentons' bacon crumbled for garnish(optional)
Assemble all ingredients and utensils. Slice tomatoes crosswise into 12 slices or the Roma tomatoes will yield 6 -7 SLICES. Pat dry and set aside. With a biscuit cutter, cut 12 large rounds or 24 small rounds from slices of bread. Spread each with with the combined mixture of mayonnaise, onion salt and pepper. Place a tomato slice on each round of bread garnish with basil, parsley mixture and if desired sprinkle bacon crumbles on top. Yield 12 big sandwiches or 24 small ones.
