TONY NEELY / NEELY'S BARBECUE
Ingredients
1 cup all purpose
flour
1/4 cup corn meal
1-tablespoon lemon pepper spice
1-tablespoon Neely's seasoning
1-teaspoon salt
2-eggs
3-6 once catfish fillets
1/4 cup margarine
Directions
Combine flour, corn meal, lemon pepper, Neely's
seasoning, and salt.
In a separate bowl lightly beat eggs.
Melt margarine over medium-high heat, using a large
frying pan.
Dip each catfish filet in egg and dredge in flour mixture
until well coated. Cook in margarine, turning once, until brown on both sides.
Remove, drain, and serve.
