DAISY KING / MISS DAISY'S KITCHEN
1 cup butter
1/2 cup sugar
3 whole eggs
1/4 cup bacon bits
2 cups creamed corn
1 cup grated Cheddar cheese
1 1/4 cups bread flour
1 1/2 cups cornmeal
3 tablespoons baking powder
1 1/2 teaspoons salt
2 tablespoons milk
Assemble ingredients and utensils. Combine butter and sugar in mixing bowl., cream until it is very soft. Add eggs ,slowly until incorporated. Add remaining ingredients, mix on a slow speed until batter becomes soft. Chill batter for up to five hours. Scoop into well greased muffin pans. Bake in a 450 degree oven for 15 to 20 minutes. Make sure the surface is golden brown. Completely cool muffins and then release from pan. Yields: 24 medium muffins.
