Honey Jezebel Cheddar Spread
Jezebel sauce is that old Southern concoction of jam, horseradish, and black pepper. In
the old days it was the hot pepper jelly alternative for slathering over a block of cream
cheese to serve with crackers. Here's our updated version with a little more punch thanks
to sharp Cheddar cheese and a little sweetness from Jack Daniel's Tennessee Honey whiskey.
8 ounces cream cheese, softened
2 cups (8 ounces) sharp Cheddar cheese
1⁄4 cup pineapple or apricot preserves
1⁄4 cup prepared horseradish
1 tablespoon Jack Daniel's Tennessee Honey
1 teaspoon dry mustard
1 teaspoon coarsely ground black pepper
Combine the cream cheese, Cheddar cheese, preserves, horseradish, Tennessee Honey whiskey, dry mustard, and black pepper in a medium bowl. Pack in a crock or bowl and serve with your favorite crackers. Makes about 2 1⁄2 cups.
Peaches and Cream Country Ham Dip
If ever there was a top-ten list of the first words spoken by a Southern child, I bet
"country ham" would be on it. Country ham tastes like nothing else. This easy dip
takes advantage of its unctuousness, while the peach preserves soften its roughness.
I particularly like to surround the dip with green complements such as crisp
celery sticks, green apple slices, green grapes, and endive scoops. Choose straightforward
Melba toast or water cracker.
8 ounces cream cheese
4 ounces (about 1⁄2 cup) diced cooked country ham
3 tablespoons peach preserves
1⁄4 cup green onion slices
1 tablespoon Dijon mustard
1⁄4 cup chopped unsalted, roasted peanuts or unsalted, toasted pecans
Combine the cream cheese, ham, preserves, onion, and mustard in the bowl of a food processor. Process until almost smooth. Spoon the dip into a serving dish and garnish with the nuts. Makes about 2 cups.
Peachy Jack Sippers
4 ripe peaches, pitted and peeled (or 4 cups frozen peach slices)
1 1⁄2 cups orange juice
1⁄4 cup lime juice
1 tablespoon sugar
1⁄2 cup Jack Daniel's Tennessee Whiskey
1 teaspoon almond extract
Mint sprigs, for garnish
Puree the peaches in a blender with the orange and lime juices and sugar. Stir in the Jack Daniel's and almond extract. Chill in a pitcher and serve in shot glasses. Garnish with mint sprigs. Makes 12 servings.
