
1 large onion, cut into thin slices
2 cloves garlic, crushed
1 beef chuck roast ( 3 to 4 pounds)
½ cup soy sauce
¼ cup Jack Daniel's Tennessee Whiskey
¼ cup Worcestershire sauce
Black pepper to taste
Scatter the onion and garlic in the bottom of a large slow cooker (at least 4 quarts). Place the chuck roast over the onions and garlic. Add the soy sauce, Jack Daniel's, and Worcestershire sauce. Sprinkle the roast with black pepper. Cover and cook on high 6 to 8 hours or on low 8 to 12 hours. The meat is done when it pulls apart easily with a fork. Remove the roast from the pot. Shred the meat for sandwiches, if desired. Top sandwiches with TN Sour Onions below:
Tennessee Sour Onions
1 medium onion, peeled and very thinly sliced
1 to 2 jalapeno peppers, thinly sliced
1 medium carrot, peeled and thinly sliced
1 cup white vinegar
1 tsp salt
1 tsp sugar
Combine all the ingredients in a bowl. Cover and chill until serving.
Makes 1 ½ cup.
