ROASTED RED PEPPER HUMMUS
2 (15-oz) cans chickpeas, rinsed and drained
2/3 c drained, roasted red peppers (in jar)
¼ c fresh lemon juice
2 t paprika
2 t cumin
1-2 cloves garlic, minced
¼-1/2 t sea salt
1/3 c olive oil
Remove any seeds from red peppers. Combine all ingredients in the container of a food processor and process until smooth, scraping down the sides periodically. Serve with bagel chips or fresh crunchy vegetables. Yield: 2 cups hummus.
WHITE CHOCOLATE OREO POPCORN
8 c popped popcorn or 1(2.75-oz to 3-oz) bag microwave popcorn, any variety, popped
12-14 Oreos cookies or Nutter Butter cookies, finely crushed
8 oz vanilla candy coating or white chocolate chips
Cook popcorn according to package directions. Place popcorn in a large bowl and remove any whole kernels of corn. Add crushed cookies to popcorn and stir to mix. Melt candy coating in microwave for 1-1 ½ minutes, stirring until smooth. Pour over popcorn and stir continually to mix completely.
SAUCES FOR MEATBALLS
Ann's Sweet and Sour Sauce
2 c tomato ketchup
½ c firmly packed brown sugar
1/3 c soy sauce
1/3 c white wine vinegar
Combine all ingredients and pour over meatballs. Heat over medium heat until sauce and meatballs are hot and steaming. Reduce heat to low to serve.
Easy Sauce for Meatballs or Franks
1 (18-oz) jar grape or currant jelly
1 (12-oz) bottle chili sauce or 8-oz jar mustard
Combine ingredients and pour over meatballs or franks. Heat over medium heat until sauce and meat are hot and steaming. Reduce heat to low to serve.
