CHEF COREY SIBLEY / C&K CATERING
Fried Strawberry Shortcake PastryIngredients16 Wonton wrappers4 Strawberries, cut into small piecesOil (canola or vegetable)1/2 tsp Sugar or Splenda1/2 tsp CinnamonDollop of Cool Whip or Reddi-wipMint LeavesInstructionsCut up strawberries into small pieces to easily fit into the wonton.Lay out wonton wrappers on wax paper and place a small amount of strawberries on the center of the wonton wrapper.Get a small bowl of butter and place where you will be working. Dip your finger into the butter and line the edge of the wonton wrapper with water. Fold wonton wrapper into a triangle and seal the edges by pinching the edges together. Take the two furthest points and bring together and seal with another dab of water. Pinch tightly to get a good seal.Heat oil to medium and gently place wontons into the hot oil.Using a slotted spoon, keep the wontons moving so that they don't stick together and cook evenly. Once they are a nice golden brown (about 2-3 minutes), take them out with the slotted spoon and place on a few sheets of paper towels to help absorb the excess oil.Sprinkle with sugar and cinnamon and serve with Cool Whip or Reddi-whip or some blue bell vanilla ice cream!Candied Bacon1/2 cup packed light brown sugar1 teaspoon ground cinnamonA pinch of cayenne pepper12 slices center-cut bacon (don't use extra-thick bacon)Directions:1. Preheat the oven to 350 degrees F. Line a rimmed baking sheet with foil and set a rack on top (like a cookie cooling rack). Spray the rack with nonstick spray.2. Mix the sugar, pepper and cinnamon in a bowl. Dip bacon slices in the cinnamon-sugar, coating both sides, and place the coated bacon strips on the rack. I like to poke the bacon into the grooves of the rack in a few places so your bacon will come out looking a little wavy.3. Bake 15 to 20 minutes, or until the bacon appears to be caramelized and crispy. Watch closely after 15 minutes since the sugar can begin to burn when left in too long.FruitiniIngredients1c cantaloupe, medium diced1c honeydew, medium diced1c grapes, diced1c strawberries, diced1c blueberries1- 8oz pkg Tropical Fusion powdered Jello gelatin2 whole strawberries1c orange juice1c whipped cream2 Martini GlassesDirectionsIn medium size mixing bowl combine all fruit.
