LYNNE TOLLEY - MISS MARY BOBO's BOARDING HOUSE
1 cup (2 sticks) unsalted butter
8 ounces semi-sweet chocolate, coarsely chopped
5 eggs
1/4 cup Jack Daniel's Tennessee Whiskey
1-1/2 cups sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
Heat the oven to 325°F. Grease a shallow 2-quart casserole or dish. Melt
the butter in a small saucepan over medium-low heat. Remove the pan from the
heat and add the chocolate. Let sit until the chocolate has melted. Whisk the
eggs in a medium mixing bowl until frothy. Add the Jack Daniel's, sugar, flour
and salt and whisk until smooth. Stir in the melted chocolate mixture.
Pour the batter into the prepared pan. Bake 40 to 45 minutes or until the
top is puffy and crusty, but the center still seems soft and under-baked. Cool
slightly and serve with ice cream or whipped cream. Keep refrigerated, but
bring it to room temperature before serving. Makes 10 to 12 servings.
