RECIPE # 4989 - HUMMINGBIRD CAKE - Tuesday, April 9, 2013

DAISY KING / MISS DAISY's KITCHEN


3 c all-purpose flour
2 c sugar
1 t soda
1 t salt 
1 t cinnamon
1 1/2 c Crisco oil 
1 1/2 t vanilla
2 c bananas, chopped
2 c chopped pecans or walnuts
1 small can crushed pineapple with juice
3 eggs, beaten

Assemble all ingredients. In large bowl, sift together: flour, sugar, soda, salt and cinnamon. Mix by hand but do not beat. Stir in remaining ingredients, mix by hand. Bake in a tube pan in a 350 degree oven for 1 hour and 25 minutes or in 3 greased and floured cake pans for 25 to 30 minutes. Cool and then frost.

Frosting

1 8-oz package cream cheese
1/2 c butter, softened
1 box confectioners sugar
1 t vanilla
1/2 c pecans,chopped

Mix together and frost cake.

Yield: 12-14 servings
