RECIPE #4991 - APRICOT & STRAWBERRY SALAD, Monday, April 15, 2013

CHEF CHARLES PHILLIPS / 1808 GRILLE

 

Salad for 2

10 dried apricots, julienne

4 strawberries quartered

2 jumbo asparagus shaved

4 green Brussels sprouts and 4 purple Brussels sprouts shaved

Toasted pistachios

2 pieces of honeycomb

Salt and pepper

 

For the vinaigrette

2 cups peeled and chopped rhubarb

1/2 cup red wine vinegar

1/4 cup champagne vinegar

1 cup water

Bring to a simmer in a sauce pot and reduce by half

Puree in a high powered blender

 

Assemble

1.Combine all the ingredients except the seared honeycomb in a stainless steel bowl and gently toss with the vinaigrette.

2. Season with salt and pepper

3. Place the salad in the middle of a large pasta bowl, lay the honeycomb on the side
