RECIPE # 5003 - UPTOWN GRITS - Tuesday, May 14, 2013

6 slices bacon

1 clove garlic, minced

1 c chopped green bell pepper

1/2 c chopped onion

1/2 c chopped celery

16-oz can stewed tomatoes, undrained

2 dashes hot sauce

6 c water

1 t salt

1 1/2 c uncooked regular grits


Assemble ingredients and utensils. Cook bacon in a large skillet until crisp; remove bacon, reserving 2 tablespoons of drippings in skillet. Drain, crumble bacon and set aside.

Saute garlic, green pepper, onion, and celery in drippings over medium heat until tender; stir in tomatoes and hot sauce. Bring mixture to a boil. Reduce heat to low, and simmer for 30 minutes, stirring occasionally. Set aside.

Meanwhile, combine 6 cups water and salt in large saucepan, bring to a boil. Add grits. Cook over low heat. stirring occasionally, 10- 20 minutes or until grits become thickened.

Remove from heat; stir in tomato mixture and serve.
