RECIPE # 5004 PINEAPPLE CILANTRO SALSA Wed. May 15, 2013

Fresh Pineapple Salsa

1 pineapple diced

2 red bell peppers diced

1 red onion diced

1 bunch cilantro chopped

4 oz rice wine vinegar

Salt to taste 

Mix all ingredients together before adding salt. Add more vinegar or sugar if pineapple isn't very ripe. 

Suggested menu: Add to spicy grilled chicken or fish. 

Watermelon Salsa 

4 cups diced (approx 1/2 watermelon)

1 cup sliced shallot

1 cup chopped mint, parsley and/or oregano (have fun and experiment)

2 cups sweet peppers (red, yellow, orange)

Salt to taste

Sugar to taste

Fresh lime juice to taste 

Mix all ingredients together before adding salt and lime juice. Add a little at a time and allow a few minutes for full salt and acidity to come through. Suggested menu: Grilled shrimp tacos or charbroiled steak. OPTIONAL: For added grilled flavor: cut watermelon (with rind on) in 1/2" slices, salt each side and place on hot grill for 30 secs each side before cutting for salsa.
