RECIPE # 5022 - OVEN FRIED CHICKEN W/PORK RIND CRUST - June 14, 2013

 2 lbs boneless, skinless chicken breast halves (about 4 pieces)

 1 1/2 c finely crushed pork rinds (1 bag, 3 ¾ ounce, will make about 2 crushed cups)

 1 1/2 c panko bread crumbs

 1 t seasoned salt

 Black pepper, to taste

 2 eggs, beaten

 2 T mayonnaise

 2 T water


Heat the oven to 400 degrees. Cut the chicken breast halves crosswise into about 1 1/2 inch wide strips. Combine the pork rind crumbs with the panko bread crumbs, seasoned salt, and black pepper in a wide shallow bowl. Blend well with your fingers. Whisk together the eggs, mayonnaise, and water in a separate bowl. Dip the chicken pieces in the egg mixture and then the crumbs. Place the coated pieces on a greased, rimmed baking sheet. Bake 30 minutes or until golden brown and crisp. The internal temperature of the chicken should be at least 160 degrees F on an instant read thermometer.
