RECIPE # SHRIMP BURGER Wednesday July 10, 2013

Wheat Bread Crumbs (2 cup crumbs)
1 pound thawed raw shrimp (40-50 count)
3 Tbl. Mayo
2 Tbl. Thin sliced green onion  
2 Tbl. Minced fresh parsley        
2 tsp. grated lemon zest        
1/8 tsp. salt
1/8 tsp. black pepper
Pinch cayenne
2 tsp. Old Bay
1 Tbl lemon juice
*Yields 4 Burgers

Rough chop thawed shrimp. Place wheat bread in food processor and pulse. Place shrimp in mixing bowl with bread crumbs and remaining ingredients. Hand mix until ingredients are incorporated.  Patty out burgers to desired size. Place in a buttered frying pan and cook on medium heat. Cook approximately 2-3 minutes on first side then flip. Cook on second side a few additional minutes. The shrimp will turn pink indicating the burger is done.
