-4 pork chops (6 to 8oz. each)
 
Brine
 
-4 lemons (zested/juiced)
-2 1/2oz (2 shots) vodka
-1 cup salt
-1 cup sugar
-1/4 cup honey
-1 bay leaf
-1 sprig oregano
-4 cups water
-2 cups ice
 
*Boil all brine ingredients together and pour over ice
*Cool completely
*Soak pork in brine for 4 hours
 
Risotto
 
-2 cups Arborio rice
-1 cup white wine
-5 cups chicken stock
-1/2 cup prepared Italian sausage
-3/4 cup diced tomatoes
-1/3 cup sliced green onions
-2 tbsp butter
-2 tbsp grated Parmesan
