RECIPE # 5086 - PUMPKIN BREAD PUDDING - Thursday, October 17, 2013

6 c pumpkin bread cubes*

2 eggs, lightly beaten

2 c milk

1/2 c granulated sugar

1/4 c butter, melted

1 t finely shredded orange peel

1/4 to 1/2 t pumpkin pie spice

1/3 c softened cream cheese, tub style

1T butter, softened

3 T powdered sugar

1-2 T orange juice


Assemble ingredients. Preheat oven to 350 degrees. Spread bread cubes in a single layer in a shallow baking pan. Bake for 20 to 30 minutes until dry and lightly toasted, cool lightly

Grease a 2 quart baking dish, set aside. In a large bowl, combine eggs, milk, granulated sugar, the 1/4 cup melted butter, orange peel and pumpkin pie spice. Stir in bread cubes until moistened. Transfer to the baking dish and bake for 40 to 50 minutes or until knife inserted in the center comes out clean. Cool slightly.

In a small mixing bowl, beat cream cheese and the1 tablespoon butter with an electric mixer on medium speed until combined. Beat in powdered sugar and the 1 tablespoon of orange juice until smooth. Beat in enough of the remaining orange juice, 1 teaspoon at a time to reach the drizzling consistency.

To serve, drizzle icing over warm bread pudding. Yield: 8 servings

*For pumpkin bread, use a 1 lb. loaf from a bakery or make your own.


Here's Miss Daisy's Pumpkin Bread recipe (from Recipes from Miss Daisy's, p. 25)

1 cup water 
1 cup oil
1 21-ounce can pumpkin pie filling or 1 16-ounce can plain pumpkin
3 cups sugar 
3 eggs
1 cup chopped black walnuts
1 1/2 cups chopped dates
3 1/2 cups self-rising flour
1 teaspoon nutmeg
1 teaspoon ground ginger
1 teaspoon salt
1/2 teaspoon ground cloves
1/2 teaspoon baking powder
2 teaspoons ground cinnamon
2 teaspoons baking soda

Preheat the oven to 325 degrees. Grease 2 large loaf pans. In a large mixing bowl mix together the water, oil, pumpkin, sugar, eggs, walnuts, and dates. Into a separate bowl sift together the flour, nutmeg, ginger, salt, cloves, baking powder, cinnamon, and baking soda. Add to the pumpkin mixture, and mix well. Pour into the prepared pans. Bake for 1 hour and 30 minutes. 

Yield: 2 loaves
