RECIPE # 5095 - BACON BOURBON JAM, Thursday, November 7, 2013

1 pound bacon, sliced in 1" pieces

1 large onion, diced

1/3 cup packed brown sugar

2-3 cloves garlic, minced

1/3 cup cider vinegar

1/4 cup maple syrup (the real deal)

1/4 cup brewed coffee

1/4 cup bourbon

1/4 tsp smoked paprika


*Prep bacon and fry until golden brown. Drain reserving 1-2 Tbsp of fat. Set bacon aside. 

*In saute pan, saute onion in reserved bacon grease until translucent. Stir in brown sugar. Cook a couple of minutes until onion and sugar begin to caramelize.

*Add garlic, liquids, & paprika. Stir well and allow to simmer, stirring occasionally until reduced by half. This will take approx. 45 minutes to an hour.

*Pour mixture and bacon in food processor and blend. 

*Ready to serve! Enjoy as a spread on toast or biscuit, as an appetizer over cream cheese and crackers, or as condiment on grilled sandwiches/ burgers.

*Keeps in refrigerator up to a month, but I bet it won't last that long.
