RECIPE #5096 - THREE BEAN CHICKEN CHILI, Thursday, November 14, 2013

CHEF DAVID OWENS / HEALTHY COOKING EDUCATOR

6 boneless, skinless chicken breasts

4 cups chicken stock

1 tablespoon fresh garlic 

1 medium onion, diced

2 tomatoes, diced

1 can white beans

1 can chili beans

1 can black beans

1 teaspoon dried oregano

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon salt

1 teaspoon black pepper

 

Directions

·       Cook chicken breast in boiling stock for 15 – 20 min. until fully done

·       Remove chicken and dice; place back in broth

·       Add rest of the ingredients to broth

·       Cook for 40 minutes on medium heat; reduce to simmer for 20 minutes

·       Salt and pepper to taste

 

Top with cheese and sour cream. Serve with baked potato or pasta
